- 200 g feta room temperature
- black pepper
- 1 lime juiced
- 1-2 ears of corn
- 4 slices of thick cut bacon cooked
- 1 avocado mashed
- fresh cilantro
- smoked paprika
- chipotle aioli
- tortilla chips
Preheat BBQ to high heat. Grill corn on all sides until charred. About 10 minutes. Let cool slightly. Use a sharpe knife to remove the corn from the cob.
In a food processor, add the room temperature feta. Blend on hight until smooth for 2-3 minutes. Add a touch of water if needed to help it get creamy. Taste and season with pepper if needed. Transfer and spread into a serving bowl.
Top whipped feta with avocado, corn, crumbled bacon, fresh cilantro, paprika and chipotle aioli. Serve with tortilla chips.
