PARMESAN TRUFFLE TATER TOTS

Crispy golden tater tots loaded with truffle aioli, black pepper and freshly grated Parmesan cheese make for the perfect snack or side dish. Delicious crispy pillows of potato with a hint of truffle oil!

Ingredients

  • 28 oz bag frozen tater tots 4 cups
  • ½ cup mayo
  • 1 ½ tbsp fresh cracked black pepper
  • 2 tsp garlic powder
  • 2 tbsp black truffle oil
  • 1 cup freshly grated Parmesan cheese
  • 2 tsp chopped chives
  • Pinch of salt

Instructions

  • 1. Place tater tots in your air fryer, spray with a small amount of olive oil. Set your air fryer to 400 degrees and fry for 10 minutes. Shake the tots around and fry for another 10 minutes until they are golden brown on the outside and crispy. For even crispier tots you can fry them for an additional 5 minutes.
  • 2. In the meantime make your truffle aioli. In a small bowl mix together ½ cup of mayo, garlic powder and fresh cracked black pepper. Add your truffle oil, you can adjust the amount depending on how strong you like the taste of truffle oil and add more or less. Mix
    everything together and transfer to a jar or squeeze bottle.
  • 3. Once your tater tots are cooked add them to a bowl and toss with a pinch of salt. Place your tots in your serving dish, next drizzle a generous amount of truffle aioli overtop, season with fresh cracked black pepper then top with a generous serving of freshly grated parmesan cheese. To finish sprinkle with chopped chives, serve with additional truffle aioli on the side.
