PERSIMMONS WITH WHIPPED RICOTTA & BLUE CHEESE TOAST

Toasted bread with whipped ricotta and a hint of blue cheese topped with sliced persimmons, pumpkin seeds, fresh thyme & honey. The perfect snack that is crunchy yet creamy with a hint of blue cheese and sweetness.

Ingredients

  • Rye bread or Sourdough bread sliced
  • 2-3 Fuyu persimmons ripened and cut into slices
  • 1 cup ricotta
  • ¼ cup blue cheese
  • Honey
  • Pumpkin seeds
  • Fresh thyme

Instructions

  • 1. In a food processor, whip the ricotta and blue cheese until creamy and smooth -about 1-2 minutes
  • 2. Toast the bread
  • 3. Spread the whipped ricotta blue cheese over the toast
  • 4. Top with sliced persimmons, pumpkin seeds, fresh thyme and a drizzle of honey
