whipped ricotta and caramelized onion pizza

Homemade pizza blanco made with rich and creamy whipped ricotta, caramelized onions, fresh mozzarella, and crispy sage leaves.

Ingredients

  • 1 homemade or store bought pizza dough ball at room temperature approx. size of 12 inch pizza
  • 1 large white onion thinly sliced
  • 2 TBS butter
  • 1/3 cup ricotta cheese
  • 125 g fresh mozzarella
  • fresh sage leaves
  • olive oil
  • black sesame seeds for garnish
  • Honey for serving

Instructions

  • Start by caramelizing the onion. Heat butter in a medium sauce pan. Cook onions on low stirring occasionally until golden and caramelized. About 20 minutes
  • Preheat the oven to 450 degrees F. If using a pizza stone, begin to preheat.
  • In a food processor or blender, add the ricotta. Blend for 2 minutes until smooth and creamy.
  • On a lightly floured surface, use your hands and fingers to push the dough out from the centre into a small round pizza. Gently pick up the dough and use your hands to stretch out the dough into a 12 inch circle. You can use a rolling pin if you aren't comfortable with this approach and roll it out until thin in the centre leaving it thicker on the edges for the crust.
  • To assemble the pizza: spread whipped ricotta as the base (just a light layer), Gently tear pieces of mozzarella with your hands and place them across the pizza, next add the onions and finish by arranging with sage and a light drizzle of olive oil. Bake for 18 minutes, rotating halfway. Cook until the crust is golden. Garnish with black sesame seeds and serve with a light drizzle of honey.
