apple cider spritz

This apple cider spritz is a fall take on the classic aperol spritz. Apple cider, prosecco and aperol come together in this refreshing cocktail that's spiced with a homemade cinnamon and thyme simple syrup.

Ingredients

  • per 1 cocktail
  • 3 oz. fresh apple cider
  • 1 oz. Aperol
  • 0.25 oz cinnamon thyme syrup
  • 2-3 oz. champagne
  • 1 oz. soda
  • garnish; apple slices thyme sprig, cinnamon stick
  • Cinnamon thyme syrup
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • handful thyme sprigs
  • 1 TBS cinnamon

Instructions

  • Fill a glass with ice. Add the ingredients as listed in order.
  • Serve immediately.

Notes

To make the syrup: Bring sugar and water to a slow boil. When boiling, add the thyme and cinnamon, stir to combine and let simmer on low to thicken for 10 minutes. Transfer to a glass jar and allow to cool completely before serving. Store in a glass jar with a lid up to 1 week in the refrigerator.
For a smokey flavour or if you have older thyme, you can torch it quickly and let it catch fire and burn a few seconds. Add it to the syrup when simmering or use it to smoke your cocktail glass.
