lentil sloppy joes

homemade plant-based sloppy joes made from lentils topped with crunchy dill pickles and red onions are perfect vegan and vegetarian friendly alternative and ready in under 30 minutes.

Ingredients

  • 1 cup lentils rinsed and drained (we used canned)
  • 2 TBS grape seed or olive oil
  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 1 green bell pepper diced
  • 1 TBS tomato paste
  • 1 TBS chili powder
  • 1 TBS cumin
  • 1 15 oz. can tomato sauce
  • 1 TBS maple syrup
  • 2 TBS Worcestershire or vegan friendly alternative
  • 1 TBS liquid smoke optional
  • 1 TBS yellow mustard or dijon
  • salt and pepper to taste
  • 6 sesame burger buns
  • garnish: red onions dill pickles

Instructions

  • In a large skillet, heat oil on medium heat. Cook onions until softened stirring occasionally for about 5 minutes. Add garlic and pepper seasoning with salt and pepper until tender for about 3 minutes.
  • To the skillet add the tomato paste with chili powder and cumin, stir to coat and allow to break down in the pan for 2 minute until heated through. Add the tomato sauce, maple syrup, Worcesteshire, mustard, liquid smoke and stir to combine.
  • Add the lentils and reduce to a medium-low simmer. Continue to cook until thickened for about 10 minutes. Taste and adjust seasoning if needed.
  • Serve on warm toasted sesame bun with pickles and red onions.

Notes

If using dried lentils, in a separate saucepan bring 2 cups of liquid (water or broth) to a boil add lentils and cook covered reducing heat for 15-20 minutes. Let sit uncovered and add as directed in the instructions.
