Ingredients
1cuplentilsrinsed and drained (we used canned)
2TBSgrape seed or olive oil
1medium yellow oniondiced
2clovesgarlicminced
1green bell pepperdiced
1TBStomato paste
1TBSchili powder
1TBScumin
1 15oz.can tomato sauce
1TBSmaple syrup
2TBSWorcestershire or vegan friendly alternative
1TBSliquid smokeoptional
1TBSyellow mustard or dijon
salt and pepper to taste
6sesame burger buns

Instructions
In a large skillet, heat oil on medium heat. Cook onions until softened stirring occasionally for about 5 minutes. Add garlic and pepper seasoning with salt and pepper until tender for about 3 minutes.
To the skillet add the tomato paste with chili powder and cumin, stir to coat and allow to break down in the pan for 2 minute until heated through. Add the tomato sauce, maple syrup, Worcesteshire, mustard, liquid smoke and stir to combine.
Add the lentils and reduce to a medium-low simmer. Continue to cook until thickened for about 10 minutes. Taste and adjust seasoning if needed.
Serve on warm toasted sesame bun with pickles and red onions.
Notes
If using dried lentils, in a separate saucepan bring 2 cups of liquid (water or broth) to a boil add lentils and cook covered reducing heat for 15-20 minutes. Let sit uncovered and add as directed in the instructions.
