pesto caprese sandwiches

Easy to assemble toasted pesto caprese sandwiches topped with avocado that's finished with a balsamic mayo

Ingredients

  • 4 sandwich buns
  • 1 TBS pesto per sandwich
  • 1 small handful of arugula per sandwich
  • 1 large tomato sliced
  • 250 g fresh mozzarella thinly sliced
  • 1 large avocado thinly sliced
  • 4 large basil leaves cut into ribbons
  • balsamic mayo
  • 1/4 cup mayo
  • 4-6 TBS balsamic vinegar
  • 1 tsp lemon juice

Instructions

  • To prepare the balsamic mayo: in a bowl combine mayo with balsamic mixing to combine. Continue to add balsamic vinegar until you reach your desired consistency. Finish with lemon juice and set aside.
  • To prepare the sandwiches: layer 1 tablespoon of pesto in each sandwich and spread evenly, followed by the arugula, tomato slices, and mozzarella. Place on a baking sheet and broil for 5 minutes or until the cheese has melted.
  • Finish by topping each sandwich with fresh avocado, some pepper and the balsamic mayo.
  • Serve immediately.
