- For the granola:
- 4 cups Rolled oats
- 2 bananas mashed
- ¼ cup coconut oil melted
- 1/4 cup maple syrup
- 1 TBS cinnamon
- ½ tsp nutmeg
- 1 cup almonds chopped
- 1 tsp vanilla
- pinch of salt
- For the parfait
- plain greek yogurt or your favourite kind
- 1 banana
- berries
- honey for drizzle optional
Preheat oven to 325 degrees F. Line a baking sheet with parchment paper and set aside.
In a large mixing bowl, combine bananas, melted coconut oil, maple syrup, vanilla, and coconut sugar. Mix well
Add the remaining ingredients and mix together. Place a single layer on the prepared baking sheet. Bake for 30 minutes stirring halfway. Let cool completely for a more clustered granola.
