caramelized onion, apple, and sage pizza with whipped pumpkin sauce

The perfect autumn inspired pizza for any night of the week! Fresh pizza dough topped with pumpkin, whipped ricotta, caramelized onions, crisp arugula, shredded pumpkin spice gouda, apple slices, and fresh sage.

Ingredients

  • 1 ball of store bought pizza dough- we like to get ours at farmboy
  • ½ can pumpkin puree
  • 1/3 cup ricotta cheese
  • 1 clove garlic minced
  • 1 sweet onion thinly sliced
  • ½ cup arugula
  • 4 oz gouda cheese shredded- we found pumpkin spiced gouda at farmboy but you could easily use regular
  • 1 honeycrisp apple thinly sliced
  • honey for drizzling

Instructions

  • 1. Preheat the oven to 400 degrees F2. Heat the butter in a medium skillet over medium heat. Add the onions and cook 10 minutes, stirring frequently until softened. Season with salt and pepper and continue cooking another 5-10 minutes reducing to low heat until the onions are golden and caramelized. Remove from the heat and set aside.
  • 2. In the same pan add a bit more oil if needed, lightly fry the sage leaves 1 minute per side and set aside.
  • 3. To make the sauce, whisk together pumpkin puree, ricotta, garlic, cinnamon and nutmeg until fluffy.
  • 4. For the dough place a piece of parchment on a surface big enough to roll it out. Lightly flour your rolling pin and the parchment and roll out the dough until it is pretty thin in a circle or rectangle. (about 12 inches) Transfer the dough onto a baking sheet.
  • 5. Spread the dough with the whipped sauce, top with arugula, caramelized onions, shred a light layer of pizza over top, place apples and finish with a bit more gouda.
  • 6. Transfer to the oven and bake 15 minutes or until the crust is golden.
  • 7. Top with the fried sage and serve drizzled with honey.
