This mild fish is packed with fresh flavors from herbs like thyme, basil, dill and chives warmed in a butter sauce with garlic that’s poured over the pan seared Sea Bass. To keep this dish light and refreshing we topped it with a zesty herb salad made of cabbage, radishes and cilantro then tossed in an Italian dressing with fresh lime juice.
To get that perfect sear on the fish and not overcook it, we pan seared it skin side down in a hot oiled cast iron skillet for 3 minutes and then broiled the top for 2-3 minutes in the oven. The fillets are small so its important to not overcook the fish.
The Sea Bass is so simple yet rich. - 2 Sea Bass fillets
- Salt & pepper
- 2 tbsp olive oil
- 3 tbsp butter
- 3 cloves of garlic minced
- 1 tbsp fresh chopped dill
- 1 tbsp fresh thyme
- 1 tbsp fresh chopped basil
- ½ tbsp chopped chives
- Juice from 1 lemon
- Herb salad
- 3 radishes thinly sliced
- 1 cup pre-packed chopped coleslaw
- 2 tbsp fresh chopped cilantro
- Salt + pepper
- Juice from 1 lime
- 1 tbsp Italian salad dressing
1. Pre heat the oven to broil high, meanwhile oil a cast iron skillet and heat over medium high heat on the stove
2. Season the fish with salt and pepper, sear skin side down for 3 minutes then finish on broil in the oven for 2 minutes.
3. Remove the fish from the pan and make your herb butter sauce using the same skillet
4. To the skillet add the butter, garlic and herbs, cook for 2 minutes and spoon over the fish for serving
5. To make the herb salad, toss everything together in a bowl and pile on top of the fish
