The ultimate patty melt filled with grilled onions, grilled mushrooms, cheddar cheese, arugula and chipotle mayo! Two of our favorite things come together to make this awesome sandwich.
Patty melts combine a burger with a grilled cheese. They are delicious, a little indulgent and definitely something we only have once in a while. This is such a great way to treat yourself and the kids while your at home. If you work from home or are keeping the kids home for online classes this year and your looking for new lunch ideas or things to make for dinner. We highly recommend you give this a try.
The classic patty melt uses caramelized onions, instead to save some time, we used grilled onions. They taste just as great and require only 15 minutes to cook. You can grill the mushrooms at the same time as the onions and burger patties, set everything a side and ready for assembly.
As for the burger patty itself, we kept it simple. Form the patties in the shape of your bread making them slightly bigger and thinner than usual. Once on the grill they will shrink and puff up. We seasoned both sides of the patty with salt & pepper directly on the grill. No need to season the beef prior to forming the patties, there’s plenty of flavor in the patty melt from the sauce, grilled onions and grilled mushrooms. If you want you could season the ground beef with a hint of Worcestershire and fresh herbs before forming your patties.
To make the patty melts, we cooked ours on a flat top grill but a cast iron or pan works just as well. Make it the same way you would make a grilled cheese sandwich, lets just put it that way. Butter the outside of your bread slice, place butter side down on the flat top and start assembling directly onto the flat top. First we start with a layer of shredded cheese, add the burger patty, top with grilled mushrooms, grilled onions and arugula. Add the last layer of shredded cheese and as for your top slice of bread, we spread our chipotle mayo or burger sauce on the inside and close the sandwich. Use a weight or heavy pan and press down on the patty melt to make sure the cheese melts and closes the sandwich together. Once your satisfied with the grill on the bottom bread, butter the top and flip your sandwich just like you would a grilled cheese. Press the sandwich down with your weight and finish grilling the other side.
To serve, cut the patty melts in half, serve with a side of pickles, fries, side salad or anything you might enjoy with your sandwich!
